Justin Dingle – Executive Chef – Melbourne Public

After 20 years travelling the world and working in the UK, Spain, China, Hong Kong, Thailand, India, Indonesia and the Maldives, Justin is now ready to call Australia home.

On his travels he has worked at a number of Michelin starred restaurants such as the La Manoir aux Quat’ Saisons with Raymond Blanc in the English countryside, Marco Pierre White at Canteen in London and Can Fabres in St Celoni, under the late Santé Satamaria.

Justin has cooked for a diverse group of famous people – from rock stars like Mick Jagger to film stars like Julia Roberts to pop stars like Madonna and even Her Royal Highness, the Queen. Even with this dinner guest list Justin points out it is still ‘all about the food’ and despite the glamorous guests he is shut away in the depths of the restaurant doing what he loves most.

For the past five years Justin has been living in Sri Lanka and India with Aman Resorts and the Mount Lavinia Group whilst also hosting his own daily cooking show. He has decided to return home as ‘Australia is truly God’s garden with produce’. We can’t wait to see what he brings to the table at Melbourne Public and Citizen!
